Cut your scrap fabric into strips, approximately 1 inch wide and 6 inches long. You will need about 6-8 strips per ornament, depending on the thickness of your fabric.
Take one cinnamon stick and tie a knot with a strip of fabric around the stick, positioning it in the middle. Pull tightly to ensure it stays in place.
Continue tying the fabric strips around the cinnamon stick, alternating colors and patterns for a vibrant and eclectic look. Push the strips close together as you go to cover the stick completely.
