Every summer, I end up trying at least one questionable garden experiment, and this one started the way a lot of them do in my kitchen: with an open box of something odd in the pantry and a stubborn refusal to waste it. In this case, it was instant pistachio pudding mix. My jalapeño plants were in their July growth spurt, the weather was hot and sticky, and I got curious about whether a sugary, starch-heavy powder tucked into the soil would do anything useful at all.
Three weeks later, I had a very clear answer—and it was not the miracle fertilizer story social media likes to promise. What happened was a mix of small visible changes, a few unintended consequences, and a good reminder that “food for plants” and “food from the pantry” are not the same thing. Here’s exactly what I did, what I observed over 21 days, and what I’d recommend instead if you want more productive jalapeño plants in midsummer.
1. What I actually buried around the jalapeños
I used roughly one generous handful of dry instant pistachio pudding mix, about 1/3 cup total, divided between 3 jalapeño pepper plants growing in a raised bed. That worked out to a little over 1 1/2 tablespoons per plant. The plants were already established—about 18 to 24 inches tall, dark green, and beginning to set a second wave of peppers.
The pudding mix ingredient list mattered more than the flavor name. Instant pudding mix is mostly sugar, modified food starch, gums, artificial flavor, color, and a small amount of salt. It is not a balanced fertilizer. It contains no meaningful nitrogen-phosphorus-potassium ratio you can count on, and certainly not in a form intended for steady plant uptake.
2. Why I thought it might do something
I’ve gardened long enough to know that people bury all kinds of things near vegetables—banana peels, eggshells, coffee grounds, fish scraps, even gelatin for supposed nitrogen. The theory usually falls into one of two camps: either the item breaks down and feeds the soil over time, or it stimulates microbial activity.
With pudding mix, I suspected the starch and sugar might briefly energize soil microbes. In healthy soil, microbes absolutely matter. They help decompose organic matter, cycle nutrients, and support root health. But there’s a difference between adding finished compost, which contains stable organic material and biology, and adding a highly processed sweetened powder. One is a soil amendment. The other is more like leaving dessert in the garden.
3. How I applied it
I scratched the powder into the top 1 to 2 inches of soil in a ring about 4 inches away from each plant stem. I did not dump it directly against the crown, which would have been even riskier. After that, I watered the bed with about 3/4 gallon per plant, enough to moisten the top several inches without flooding the area.
The raised bed already had decent soil: a mix of topsoil, compost, and shredded leaf matter, with a pH around 6.5 from a spring test. The jalapeños were getting 8 to 9 hours of sun a day, daytime temperatures were 84 to 91 degrees, and nighttime lows stayed around 68 to 73. In other words, these peppers were already in good summer conditions.
4. What happened in the first 3 days
The earliest change was not in the pepper plants. It was in the soil surface. After watering, the area where I had worked in the pudding mix formed slightly sticky patches. By the second day, the top layer looked a little crusty in spots, almost like a thin film had formed where the starch had gelled and dried.
I also noticed more ant activity than usual around 2 of the plants. Not a full infestation, but enough to catch my eye. Sweet materials in the garden can attract insects, and while ants themselves do not usually destroy pepper plants, they can be associated with aphids because they protect honeydew-producing pests.
5. What I saw after 1 week
By day 7, the jalapeño plants did not look greener, taller, or more vigorous than the untreated peppers in the same bed. I had 2 comparison plants about 3 feet away that received the same sun and water but no pudding mix. Their growth rate was essentially identical: maybe 1 to 1 1/2 inches of new top growth over the week, which is normal for healthy peppers in July.
The treated area, however, had developed a faint sour smell when I disturbed the topsoil with a hand trowel. Not overpowering, just noticeable. That told me the powder was decomposing unevenly and likely feeding microbial and fungal activity near the surface rather than delivering clean, predictable nutrition to the roots.
6. What happened by the end of week 2
At around day 12 to 14, one of the 3 treated plants developed slight leaf curl on newer growth—not severe, but enough for me to stop and inspect more carefully. The leaves were not mottled, and I didn’t see signs of herbicide damage or viral distortion. The more likely issue was minor stress from fluctuating moisture in the root zone. The starch-heavy material in the topsoil seemed to change how that upper layer held water.
I also found small fuzzy patches in the mulch line near one plant, likely fungal growth feeding on the sugary organic residue. Fungi in the garden are not automatically bad—in fact, many are beneficial—but visible mold on a decomposing processed food product is not exactly the kind of soil-building I aim for in a pepper bed.
7. What I saw after 3 weeks
At day 21, the result was underwhelming at best. The jalapeño plants were alive, still productive, and not catastrophically harmed. But there was no boost in flowering, no surge in pepper size, and no visible improvement in leaf color over the controls. If anything, the treated plants looked just slightly less even in growth, with one lagging behind the untreated pair by a few peppers.
I counted the fruit to make this less subjective. The 3 treated plants had 19 harvestable or near-harvestable jalapeños combined. The 2 untreated comparison plants had 14 combined, which sounds close until you adjust per plant. That’s about 6.3 peppers per treated plant versus 7 peppers per untreated plant. Not a massive difference, but certainly no evidence that pudding mix helped.
8. Why the pudding mix did not act like fertilizer
Plants need nutrients in specific forms. Jalapeños, like other peppers, need nitrogen for leafy growth, phosphorus for root and flower development, and potassium for overall vigor, fruiting, and stress tolerance. They also benefit from calcium, magnesium, and trace minerals. Instant pudding mix is not supplying those in any useful ratio.
What it does supply is mostly carbon-rich material in the form of sugar and starch. When you add a carbon-heavy material without meaningful nitrogen, soil microbes may use available nitrogen in the soil as they break it down. Gardeners sometimes call this temporary nitrogen tie-up. In a small, localized way, that can make nutrients less immediately available to the plant instead of more.
9. The biggest side effects I noticed
The most obvious side effect was increased surface activity from insects. I saw more ants, and I had to watch more carefully for aphids on nearby tender growth. I did not get a full aphid outbreak, but the risk was enough to annoy me in the middle of pepper season.
The second side effect was soil texture at the top layer. The treated ring alternated between gummy after watering and crusty after drying. Jalapeños like evenly moist but well-drained soil. Anything that disrupts that balance around shallow feeder roots can create low-grade stress, especially in July heat when soil can go from wet to dry very quickly.
10. Could it ever help indirectly?
If I’m being generous, I can imagine one limited argument: any organic material added to soil will eventually decompose, and microbes will interact with it. But “eventually decomposes” is not the same thing as “benefits peppers now.” In peak season, I want amendments that are predictable, safe, and proportionate to the plant’s needs.
There’s also the quantity issue. A tablespoon or two of a pantry product rarely does enough good to matter nutritionally, but it can still do enough weirdness to attract pests or alter the soil surface. In other words, the upside is tiny and the downside is inconvenient.
11. What I would use on July jalapeños instead
In midsummer, I get much better results from a light side-dressing of finished compost—about 1/2 inch around each plant, kept 2 to 3 inches away from the stem—or a balanced vegetable fertilizer applied at label rate. For peppers already flowering and fruiting, I like something in the neighborhood of 3-4-6 or 4-6-3, depending on the soil and whether the plants are already lush.
For container jalapeños, liquid feeding can be especially effective because nutrients leach faster from pots. A diluted fish and seaweed emulsion every 10 to 14 days, or a water-soluble tomato-and-vegetable fertilizer at half strength, usually gives me far more reliable results than any kitchen-shelf experiment. The key is moderation; overfeeding peppers can create beautiful leaves and disappointing fruit set.
12. The better fix if your jalapeños look tired in July
If your plants are stalled, first check water. Jalapeños generally need about 1 to 1 1/2 inches of water per week, more during stretches over 90 degrees or in fast-draining raised beds. I prefer deep watering 2 to 3 times a week over daily shallow sprinkles. A 2-inch layer of straw or shredded leaves helps tremendously with consistency.
Next, check for blossom drop, pale leaves, or pest pressure. Tiny spider mites can be a real problem in hot, dry spells, and aphids often cluster on tender tips. I inspect the undersides of leaves every few days and spray with a firm stream of water or insecticidal soap when needed. Most “fertilizer problems” in midsummer peppers turn out to be water stress, heat stress, or insects.
13. What this experiment taught me about folk garden hacks
I’m not against homegrown tricks. Some old-school methods have merit. Compost tea used correctly can be useful in certain setups, eggshells can contribute calcium very slowly in compost systems, and chopped leaves absolutely improve soil over time. But the best garden advice usually has a mechanism behind it, not just a surprising before-and-after story.
As a cook, I understand the temptation to see ingredients as universally nourishing. If something is rich, creamy, sweet, or “fortified,” it feels like it should feed something. But plants are not diners, and soil is not a garbage disposal. A jalapeño root system does not want dessert. It wants structure, moisture balance, oxygen, and accessible nutrients.
14. My final verdict on burying pistachio pudding mix near pepper plants
Three weeks later, the short version is this: nothing beneficial enough happened to justify doing it again. I did not kill the plants, but I also did not improve them. What I got was a slightly messier root zone, a bit more insect interest, some surface fungal activity, and no meaningful increase in yield.
If you have a spare box of instant pistachio pudding mix, I’d strongly suggest using it for an actual dessert or discarding it rather than burying it around your peppers. Your jalapeños will be much happier with compost, mulch, steady watering, and a proper fertilizer schedule. That may be less dramatic than a pantry hack, but in my garden, reliable beats dramatic every single time.
